SPINACH AND STRAWBERRY SALAD
Spinach contains magnesium which is a great agent for calming your nervous.
12 ounces fresh spinach
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons sliced scallion
1 pint strawberries sliced
Black Pepper and Cayenne Pepper to taste
2 tablespoons fresh mint leaves
2 tablespoons chopped fresh parsley
2 tablespoons fennel seeds (optional)
2 tablespoons sesame seeds, toasted (optional)
Wash spinach thoroughtly and cut off the stems. Dry leaves and tear into bite-sized pieces. Refrigerate until ready to eat.
To make the dressing blend the olive oil, vinegar, scallion, cayenne, and pepper in a small bowl.
Combine strawberries, mint, parsley, and fennel in a large salad bowl. Add the spinach and toss gently. Add the dressing and toss again. Top with toasted sesmae seeds.
