FRUIT SALADS

  RAINBOW CASTLE SALAD
2 large red apples,
1 cup red strawberries, halved or sliced,
2 cups cubed orange cantaloupe
1 cup orange tangerines peeled into slices,
1 large or 2 small yellow bananas sliced.
2 cups green pears sliced,
2 large green apples,
1 cup purple grapes,
1/2 teaspoon fresh lemon juice
1 Tablespoon orange juice
1 cup low-fat vanilla or plain yogurt
1/2 teaspoon lemon zest
2 tablespoons fresh mint chopped
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon cumin (optional)
1/2 teaspoon vanilla

Instructions:
In a small bowl or blender mix the yogurt with orange juice, spices, vanilla and lemon zest.

Toss the fruit together with lemon juice. You can use all the fruit above or add your favorites. Drizzle the yogurt mixture over the fruit and serve.

FRUIT KABOBS
These healthy snacks are fun to eat and make.
What You will need:
plastic straws - bananas, oranges, apples - cheese - strawberries - pineapple (fresh or canned chunks, unsweetened)
What you will do:
Have someone older help you with these first three steps
1. Cut the cheese into bite-size chunks
2. Cut the fresh pineapple and fruit into chunks.
3. Wash and drain the strawberries.
4. Push a straw through six or seven of the pieces. Start with a piece of cheese then fruit, then cheese, then another type of fruit, and so on. Place two strawberries in the middle to look like a pair of hearts.
